Make Bacon Waffles – Recipe with Bacon IN the Waffle!

I love waffles, so I made these delicious bacon waffles with chocolate chips. I know you may be thinking….do you put bacon in your waffle? And the answer is…yes, of course! It is so amazing and a sweet and salty treat, all in one bite. Top with maple syrup and serve with a side of waffle eggs. You won’t believe how delicious this breakfast is.

My mother would always make THE most delicious waffles. She would make a big batch and freeze them and toasting these up the next day was simply amazing. I honestly never had an Eggo waffle until I was an adult. After you have made this recipe, you may never go back to buying frozen waffles. 

This waffle recipe is very similar to the one my mother always made. It is a fail proof recipe and the best way to make waffles!

I love that most of this meal can be made in your waffle iron. It makes it extra special and cleanup is easier, too. Plus, who doesn’t love finding bacon in their waffles??

Do you butter your waffles?

I always buttered my waffles growing up, and I think most people do. The secret is to put the pat of butter on right after it comes out of the hot waffle maker so it melts easily. Another tip is to stack them after buttering so the butter melts.

Can you make these waffles gluten free?

Yes! Just swap the wheat flour with a one to one gluten free flour.

What else can you add to bacon waffles?

If you are not a fan of chocolate chips, you can omit them. If you are not a fan of bacon, add sausage, turkey bacon or ham. But, if you want to add something different to your bacon waffles besides chocolate chips, try blueberries, pecans, or even something fun like Oreos. If you want to make savory waffles, try topping with parmesan cheese and green onions. Or you could even make bacon cheddar waffles!

What sides are good to serve with bacon waffles?

Of course you can serve waffle eggs (made in the waffle iron,) and and extra side of crispy bacon. You can also serve with yogurt, fruit, or something savory like taco potatoes to balance out the sweetness.

Bacon Waffles With Chocolate Chips & Waffle Eggs

Bacon Waffles With Chocolate Chips & Waffle Eggs

Yield: 5-6 servings
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

These delicious bacon waffles with chocolate chips and waffle eggs make the perfect breakfast!

Ingredients

  • one package of bacon
  • 3 large eggs for waffles, (plus additional 3-4 eggs for Waffle Eggs)
  • 1 1/2 cups of milk
  • 1/2 cup of oil
  • 1 tsp baking soda
  • 1 3/4 cup all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup of chocolate chips
  • melted butter for topping waffles, optional
  • real maple syrup, optional

Instructions

        1. Cut slices of bacon in half.
        2. Cook bacon on medium heat in a cast iron skillet for 2-3 minutes on each side. (You don't want to crisp the bacon in the skillet.)
        3. While bacon is cooking, prepare waffle mix.
        4. Crack 3 eggs in a mixing bowl.
        5. Add in milk, oil, baking soda, salt, baking powder, and flour.
        6. Beat with beater until smooth.
        7. Fold in chocolate chips.
        8. Spray waffle iron with cooking spray and heat waffle iron according to directions.
        9. Place two half bacon slices on each waffle square of the preheated waffle iron.
        10. Pour 1/3 cup of batter onto each square, over the bacon. Close iron.
        11. Cook waffles until slightly brown, remove them from the iron with a pair of tongs.
        12. Let waffles cool on a cooling rack and leave them in a single layer so they don't get soggy.
        13. To cook waffle eggs, simply spray the waffle iron with cooking spray, crack one egg into each square of the waffle iron, and cook until done.
        14. Serve bacon waffles with waffle eggs and more sliced bacon! Top with syrup and enjoy.

Notes

If your bacon is already cooked, you can add crumbled bacon or bacon pieces to your waffle batter.
Keep waffles warm in a preheated oven. This also helps them crisp up if you prefer crispy waffles.
For maple bacon waffles, add 2-4 tablespoons maple syrup to the batter.
Store remaining waffles in an airtight container in the fridge for 3-4 days or in the freezer.
