I’m thrilled because our garden is taking off! We are harvesting about 3-6 zucchini and squash a day and while that may not sound like a lot, when it’s really just 2 of us that eat a lot of it, it really is. We have been giving some away, but I also have been looking for zucchini and yellow squash recipes that our family will actually eat, because steamed and stir fried gets really old, really quickly. Here is a round up of some yummy recipes, just in time for the summer bounty!
