The easy to make chocolate ganache is poured over the cooked brownies, topped with strawberries. That way, the berries sort of hide in the chocolate ganache and are a delicious surprise when biting into the brownie!

What ingredients do I need to make strawberry brownies with chocolate ganache?

All you need is a box of your favorite brownie mix and the ingredients needed to make them, strawberries, chocolate chips, and heavy cream.

Can I make this recipe gluten free?

Yes! Just use your favorite gluten free brownie mix. I recommend this one, but any brand will do!

Can I use other berries for this recipe?

Yes, raspberries, blueberries, and even blackberries would do nicely in this recipe! I do still think strawberries work the best, but other berries are always an option.

Should I store the leftovers in the refrigerator?

It won’t hurt to leave this dessert on the counter for awhile, as long as it is covered, but yes, I would store the leftovers in the fridge once you head to bed! This will ensure that it lasts longer, as the dairy in the ganache probably needs to be chilled.

Strawberry Brownies with Chocolate Ganache

These rich strawberry brownies with chocolate ganache will become your new go to recipe for wowing the crowd!

Ingredients

  • 1 box of brownie mix and ingredients for preparing them as listed on the box
  • 1 lb strawberries, de-stemmed and cut in half
  • Chocolate Ganache
  • 3 c semi sweet chocolate chips
  • 1 ½ c heavy whipping cream

Instructions

    1. Begin by preheating the oven according to the directions on the brownie box.
    2. Prepare the brownie mix according to the box.
    3. Spray an 8x8 baking dish with non-stick baking spray, set aside.
    4. Pour brownie mixture into the 8x8 baking dish and bake according to directions.
    5. While the brownies are baking, remove stems from the strawberries and slice in half, then set aside on a paper towel. (Ensure that the strawberries are completely dry otherwise the ganache will not stick.)
    6. In a microwave safe bowl, add chocolate chips and heavy whipping cream. Heat in the microwave in 30 second intervals, making sure to stir in between. Cook until thicky and shiny, then you will know it is done.
    7. Remove the brownies from the oven and allow to cool.
    8. Once the brownies have cooled, place the strawberries on top of the brownies with the cut side facing down.
    9. Next, drizzle the chocolate ganache over the top of the strawberries. You may need to use a spatula or back of the spoon to ensure the chocolate is an even layer.
    10. Place in the refrigerator for 20-30 minutes to allow the ganache to set!
      Top with another strawberry half, if desired. Serve and enjoy!
