Samoa Brownies Recipe (Caramel, Coconut & Chocolate Brownie)

If you love caramel sauce, toasted coconut, and chocolate, you likely love a good samoa cookie. And if you love samoa cookies, you will love these Samoa Brownies!

When I was a child, we lived in a small town and there was not an established Girl Scouts program but only a few years. I think I was a Girl Scout for two years, and I am thinking I only sold Girl Scout cookies once, but maybe not. But I do remember buying those delicious cookies. Thin Mints and Caramel deLites were my favorites! But wait… are you asking what is a Caramel deLite? Little ol’ me didn’t know what a Samoa cookie was until I was an adult, and apparently that’s because Girl Scout Cookies are made by different companies and called different things depending on what part of the US you live. 

Love the combination of coconut, caramel and chocolate? Samoas are made by Little Brownie Bakers, while ABC Bakers produces Caramel deLites. Each cookie uses similar ingredients, but measurements vary. Those slight differences result in Caramel deLites having a higher cookie to caramel ratio. Samoas also tend to have more coconut, along with chocolate coating resembling dark chocolate, rather than the milk chocolate drizzle found on Caramel deLites. – Taste of Home

It does not really matter what you call them, they are delicious! If you have not ever looked, different versions of this yummy cookie are found in almost every grocery store. And there are many recipes online for homemade samoa cookies.

But today, I am going to tell you how to make this decadent dessert that  is really an easy brownie recipe, because it uses store-bought brownie mix. Can you use a homemade brownie recipe? Of course! Just sub your own recipe in for the box mix. There are many brownie recipes online if you have all the ingredients but no brownie mix.

Just like the brownies, if you want to use homemade caramel, of course you can, it is just up to you, what ingredients you have, and how much time you have to make these delicious caramel coconut brownies.

How do you make samoa brownies?

Below is the recipe card, but essentially all that you do is make the brownie batter according to package directions and cook it, toast coconut and mix it with the gooey caramel. Then, spread the caramel mixture on top of the cooled brownies. Then, you melt chocolate chips and drizzle the melted chocolate on top. Lastly, you drizzle the remaining caramel sauce on top. 

So, it goes like this: brownie base, coconut and caramel layer, then drizzle with melted chocolate and caramel. These might just be the best brownies you have ever had!

Just look at that ooey gooey caramel!  So good!

Samoa Brownies Recipe (Caramel, Coconut & Chocolate Brownie)

Yield: 10 brownies
Prep Time: 10 minutes
Cook Time: 45 minutes

Samoa Brownies are gooey, sweet, rich brownies topped with caramel and coconut that taste like Samoa Girl Scout cookies!

Ingredients

  • 18 oz box of brownie mix (and ingredients required for it)
  • 2 ½ cups of shredded coconut
  • 14 oz jar of caramel (¼ cup set aside)
  • 1 cup of semi-sweet chocolate chips

Instructions

    1. Line a 8x8 baking dish with parchment paper and set aside.

    2. Preheat the oven to whatever temperature the brownie box says for an 8x8.

    3. In a large bowl, prepare the brownie mix according to the box directions.

    4. Pour into the 8x8 and cook in the preheated oven for the instructed time, around 35-45 minutes.

    3. Use a butter knife or toothpick and stick it in the middle to see if the brownies are done. If still wet, continue cooking for another 5 minutes. (don't overcook, gooey is better!)

    4. Once done, take brownies out of the oven and cool for 35 minutes.

    5. While brownies are cooling, toast the coconut on a medium heat in a skillet until golden brown.

    6. Once toasted, pour the coconut into a medium sized bowl.

    7. Add the caramel to the bowl minus ¼ of a cup. Save for the topping.

    8. Stir the coconut and caramel together until well mixed.

    9. Spread the mixture all over top of the brownies evenly.

    10. In a small microwaveable bowl, add the chocolate and melt in the microwave, around 30 seconds and stir until melted.

    11. Pour melted chocolate into small zip lock bag and cut a small piece of the corner off. Drizzle the chocolate on top of the brownies.

    12. Add the ¼ cup of caramel to a zip lock bag and repeat drizzling it the opposite way of the chocolate. Place in the fridge for 1 hour or the freezer for 30 minutes.

    13. Take out and slice into squares and enjoy!!

Notes

●Store in an airtight container in the fridge for 3-4 days.
●Can omit the chocolate and caramel drizzle at the end, if desired.
●Make the tip of the zip lock bag as big as you’d like the drizzles to be.
●Use a silicone spatula to spread the caramel coconut mixture.
