I love this recipe because the shredded pork is very versatile and leftovers are welcomed! The meat can be used for tacos, burritos, nachos, burrito bowls, quesadillas, torts, and more. You can even turn this into a Whole30 meal by making lettuce wraps or tostadas with these air fryer tostones.

This Instant Pot Shredded Pork Tacos Recipe is a winner! It's easy to make and very versatile!

Ingredients

  • 3 pounds of pork tenderloin, cut into chunks or strips
  • 1 teaspoon salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 cup of salsa
  • 1 tablespoon olive oil
  • 1 c beef or chicken broth

Instructions

    1. Slice pork tenderloin into cubes or strips.
    2. Toss salt and brown spices with the pork.
    3. Turn on the instant pot and select the sauté function.
    4. Sauté the pork in olive oil for about 5 minutes or until it is brown on all sides.
    5. Add broth to the pork and seal the instant pot.
    6. Select the manual setting and set the timer for 40 minutes. (It will take about ten minutes before the timer starts to count down.)
    7. When the timer beeps, quick release the steam.
    8. Using a serving spoon, shred the pork. It should be very tender and want to fall apart.
    9. Add the cup of salsa and stir.
    10. Place the lid on the instant pot and allow the tacos to rest for about 5 minutes.
    11. Serve on street taco shells or over nachos.
    12. Store leftovers in the fridge in an airtight container.
