- 2 eggs
- 1 cup of shredded cheese (cheddar, Monterey Jack, or a blend)

Instructions
- Heat a cast iron skill or other non-stick pan over medium heat.
- Place a tortilla in the pan to warm (and cook if it is uncooked)
- Set aside and warm or cook the other tortilla
- Remove from pan.
- Crack two eggs in the hot pan.
- Salt and pepper as desired.
- Let cook for 3 minutes and check for doneness and flip and cook another 3 or more minutes.
- Remove from pan when fully cooked
