When you get more familiar with this recipe or if you are a pro at making grilled cheese sandwiches, you can change up or add more ingredients to make this recipe even more incredible! Garlic butter instead of regular butter, olive oil if you are dairy free, creamy avocado inside the sandwich, spicy bbq sauce for a spicy chicken sandwich with added gooey goodness and spice! A dash of onion powder, green onion, or fresh garlic will also add flavor to your sandwich. ​

What do I serve with my grilled cheese sandwich?

​I like to serve some fruits or vegetables when I make grilled cheese sandwiches, but also some potato chips, extra bbq sauce in a small bowl for dipping, and a glass of tea makes this the perfect meal!

Barbecue Chicken Grilled Cheese on Sourdough with Banana Peppers

Ingredients

  • ½ cup cooked and shredded barbecue chicken
  • 2 pieces of sourdough bread
  • ½ cup cheddar cheese
  • Pickled banana peppers, thinly sliced
  • Butter
  • Barbecue sauce
  • Optional: Fresh cilantro, red onion, and/or parsley for garnish

Instructions

    1. Prepare the Barbecue Chicken: Start by cooking and shredding the chicken. Toss it in your favorite barbecue sauce or homemade bbq sauce until it's well-coated and infused with that smoky flavor.
    2. Assemble the Sandwich: Take two slices of hearty sourdough bread. Butter each side and place on a skillet or pan on low - medium heat.
    3. When both sides are slightly browned, remove from pan and add half of the cheese.
    4. Then repeat with the other slice of toasted bread.
    5. Place both pieces on the hot skillet and add bbq chicken.
    6. Add more bbq sauce and banana peppers.
    7. When cheese is melted, carefully bring both pieces of bread together to make a delicious sandwich.
    8. Remove the sandwich from the pan and let it rest for a moment.
    9. Optionally, sprinkle fresh cilantro, onions or parsley on top for a burst of freshness.
    10. Serve and enjoy! Slice the sandwich in half and savor each bite of the flavorful combination of barbecue chicken, melted cheese, and the tangy kick of pickled banana peppers.

You can use any cheese you prefer. I used cheddar cheese, but there is also american cheese, havarti cheese, provolone cheese, pepper jack cheese, monterey jack cheeses....etc!
