Tacos are life. Taco Tuesday is my favorite day of the week. I live for tacos. And it isn’t just tacos, it is everything that could possibly come with them. Mexican rice, cilantro lime rice, beans, and potatoes. YES! Taco potatoes are SUCH a great addition to your Taco Tuesday. They are a great Mexican side dish or a taco filler and they are jam packed with flavor.
While these taco potatoes can be made in the air fryer, and I would be all for that, they roast to perfection in the oven and the texture is perfect. Especially if you use Yukon Gold potatoes, which I’m hereby declaring the world’s best potato. They’re so buttery, soft, and delicious.
I made these perfect taco potatoes with enspice taco seasoning. At first glance you may think “that’s just like any other taco seasoning” but it is NOT. The flavor of enspice is true and utter perfection. Plus, it has added benefits!

My favorite memories of Christmas involve opening gifts, it’s true! Whether it was opening gifts on Christmas morning as a kid or opening gifts with my own children and family in recent years, it truly is a magical time of year! Christmas with these three little guys is always a blast!

For two out of the three rounds of Whole30 that I have done, I have started in January. Makes sense, right? That’s when you are supposed to restart, detox, etc etc. But I just finished up my third round and it was SO good after months of stress eating because of covid, lockdowns, and virtual learning. Things to do Before Sending Your Child Back To School After Virtual Learning
Our 6 year old has not been in school in person since March 8th of this year, like many kids around the country. Next week, he will be going back in person and we are all a little nervous, but excited!
He has been rocking his first grade virtual assignments, and we have also been doing a lot of writing, reading, and spelling practice. We were told he could stay virtual until January, but the district has decided to just bring all students back. He took the news well, and is excited to see his friends! His two older brothers have already been back to school, so that helps for sure.

Find some good masks and practice wearing them.
Masks have been recommended by health officials to slow the spread of viruses, so even though our state mandate says kids under do not have to wear a mask, we are encouraging, as is his teacher, to wear a mask unless eating or playing at a distance outside. I polled my friends on Facebook to see what masks their kids liked best, and thankfully, he is pretty good at mask wearing already, but we did find some more comfy ones that he likes.
Encourage them to Speak Up
Now is a great time to talk about how and when to voice concerns. I have told all three of my kids that if they are in an uncomfortable situation, to tell the teacher nicely and then follow up by telling me at home. This is beneficial for so many reasons, but if they do not feel safe, they cannot learn and will not want to return to school.
