How to make Strawberry Icing!
My husband and sons have many things in common, but their love of strawberries is a strong bond that they all share! I love strawberries, too, but I prefer them paired with chocolate like in my Chocolate Covered Strawberry Cake recipe. We have poundcake or angel food cake with strawberries and whipped cream often, but my kids really love homemade strawberry cake with homemade strawberry icing. It’s always a winner! And when you let the kids add their own preferred amount of icing…well, it’s a win. ha!
Do you have kids that prefer different things? One of my kids would eat the cake alone, the next would put too much icing and a little cake, and then the other would spread a little icing and a lot of cake! This is why icing your own piece is a good idea for us!
And if you would rather just eat the icing…well, that’s okay, too, right?
This recipe whips up really quickly and the results are so yummy! All you need is a blender, a mixer, strawberries, butter, vanilla, a little salt, and powdered sugar.
If you have leftover icing, then the sky is the limit! It would be great for stuffed strawberries or a pancake topping, too!
Easy Homemade Pork Sausage Recipe – Perfect with Potatoes!
We have done Whole30 a couple of times now, and I have loved discovering how to cook clean, delicious foods that nourish the body. This recipe for homemade sausage is Whole30 approved as long as you leave out the maple syrup. It is delicious with or without, so no need to worry there. You can also adjust the amount of spice in the sausage to fit your family’s tastes. Spicy or mild, this pork sausage recipe is a winner!
Serve it with potatoes, as I show you in the recipe below, or in breakfast burritos or breakfast pockets. It freezes well, too, so make a batch to keep on hand at all times! I never like the ingredients in store bought sausage, so this is a great, clean alternative.
I prefer to get my pork sausage from Butcher Box because they have heritage breed, humanely raised, vegetarian fed pork that are never given antibiotics or added hormones.

I’m thrilled because our garden is taking off! We are harvesting about 3-6 zucchini and squash a day and while that may not sound like a lot, when it’s really just 2 of us that eat a lot of it, it really is. There is nothing better than a fresh bowl salsa with chips and this fire roasted salsa recipe is SO delicious!
Our fridge always has a jar of homemade salsa in it. Sometimes it is regular salsa, occasionally fruit salsa, and then sometimes, this fire roasted salsa. The key is to get a can of fire roasted tomatoes, but you could definitely roast your own tomatoes if you have a plethora of tomatoes in your garden! Then, get 1-2 of your favorite pepper, roast it, and blend it all together with some spices! Serve with your favorite tortilla chips OR on top of enchiladas, tacos, or rice, and you will have a happy family!
Hubby and the boys and I can clear out some chips and salsa in no time, especially if our favorite team is playing on tv!
Fire Roasted Salsa

My family loves enchiladas, but there is not always enough time to make my homemade, authentic cheese enchiladas. Sometimes you have to make quick, easy meals like these Air Fryer Chicken Enchiladas, made with rotisserie chicken, tortillas (flour or corn), enchilada sauce, cheese, and onions. This meal comes together quickly and is ready to serve in no time. If you don’t have time to stop by the store for a rotisserie chicken, any cooked chicken will work!
I love the way that these enchiladas cook in the air fryer. There is a slight crunch on the edges, and they are so delicious! Serve them with some homemade or store bought salsa, guacamole, and sour cream for an incredible flavor.

I grew up eating a dessert called Four Layer Dessert that my mom made. It was SO good. That, along with my family’s obsession with strawberries, is what inspired this Chocolate Covered Strawberry Dessert. Some may call it Chocolate Strawberry Lush, or Chocolate Strawberry Lasagna, but whatever you call it, this no bake dessert is absolutely incredible.
This dessert takes some planning and refrigeration between layers, but it will be worth it in the end, I promise! I made the Oreo crust first, then the strawberry cream cheese layer and while that set in the fridge, I made the chocolate covered strawberries and let them cool. Then the next layer is the chocolate vanilla pudding combo and finally, whipped topping on top. (I used Tru Whip, but Cool Whip is totally acceptable, too.)
My 9 year old was shocked when I said I just made up this dessert and he deemed it “the best dessert ever.” I tend to agree with him, and strawberries are NOT my favorite fruit. I mean, you can’t go wrong when you add chocolate though, am I right?

There is something nostalgic about banana pudding. It was an easy, quick dessert that everyone loved when I was growing up. It would adorn tables at potluck, be the perfect after dinner dessert, and the differences in recipes was always intriguing to me. Some people add cream cheese, some use different flavors of pudding, but no matter what, it was going to be good. Do you really want to take a fluffy, milk based dessert to a picnic on a hot day, however? The answer is no. So, with that in mind, I bring you, Banana Pudding Cookies!
These cookies are good on their own, but I HIGHLY suggest you grab a bottle of whipped cream to add to the deliciousness!
Banana Pudding Cookies are easy to whip up and they’ll be devoured in no time, so make sure to make enough!
While this recipe doesn’t call for actual bananas, adding a half of a banana to the mix might make it super delicious. I think I will try that next time!
