Ahhh Fall… the leaves falling, the acorns crunching under my feet, the cold fronts that blow through…who doesn’t love Fall? Sure, Summer is gone and the holidays are approaching, but it seems like Fall is the calm before the storm. I love adding cool weather recipes like this Instant Pot Tomato Soup to my lineup. As the summer heat keeps going up, I want to turn my oven and stove on a lot less. Who wants to cook when it is 90 degrees outside? We still prefer home cooked foods on most days, so I rely on my Instant Pot often. When I need to make a quick meal, I might pick up a rotisserie chicken at the grocery store, along with makings for a fresh salad, delicious peaches for dessert, and this Instant Pot Macaroni and Cheese as a side dish. This recipe is creamy and delicious because of a secret ingredient!View Post
Instant Pot Mexican Chicken and Rice is one of our favorite recipes! This post has been sponsored by Grass Roots, but all opinions are mine.
My family has one thing in common. We all love meat. There is just something about a juicy grilled hamburger or baked chicken. When meal planning, I usually start with the meat we have on hand and form my meal around it. I like to stock up when there are sales and keep our deep freezer stocked with many choices. Finding the best choice for pasture raised meat with no pesticides, antibiotics, hormones, or GMOs is sometimes tricky and usually expensive. It is hard for a meat loving family to buy the best choice in meat…usually.
I recently discovered the Grass Roots company and have been very pleased. It is simple. You pick the meat you would like in your box and Grass Roots ships it out in an eco-friendly packaging with dry ice. When I received my box, everything was still frozen, so I just put it into our freezer. When you want to thaw something out, simply put it in a bowl in your fridge and depending on the size, it will be thawed when you are ready to prepare it.View Post
I can think of a myriad of reasons that I prefer using my Instant Pot over any other cooking device. The oven and stove heat up the house and take longer to cook things, the cleanup is always worse with bigger appliances, and well, the Instant Pot is SO easy to use! Take this Instant Pot Cajun Rice & Sausage recipe for example…everything cooks in one place, the flavor is amazing, and cleanup is a breeze!View Post

The Instant Pot is my absolute favorite, because it made Mexican rice simple and fail proof in my house. I have made so many things in my Instant Pot, and it is almost time to buy a new one, just because I use it SO often. Imagine the possibilities of having TWO! Why have I not bought two yet??
The Instant Pot not only makes delicious rice, perfect hard boiled eggs, zucchini lasagna, and cinnamon apples, along with a myriad of other foods, this genius kitchen appliance can knock desserts out of the ballpark! Here is a recipe for Instant Pot Chocolate Cheesecake and it of course does not disappoint!View Post
A few years ago, our oldest ordered cinnamon apples at a restaurant and he was hooked. They were buttery, cinnamon-ny, and delicious. I wanted to recreate these easily at home, so I made Microwave Cinnamon Apples. (< click for that recipe!) Fast forward a few years and thousands of apples later, I am all about the Instant Pot. While I would still rank the microwave cinnamon apples a little easier with less cleanup, the Instant Pot Cinnamon Apples are pretty awesome, too. And they are good if you are concerned about using a microwave.View Post
You all know that my family is in love with rice. I make Instant Pot Mexican Rice once a week, because it complements just about any Mexican meal very well AND my kids love it! Did you know rice has protein? It does! So if one of the boys isn’t feeling the main meal, they can eat rice and maybe some beans or cheese and be good to go.
When going to a Mexican restaurant, one of us usually orders steak. Whether it be fajitas, burritos, or a steak bowl, it’s always a winning meal. For this recipe, I combined my Instant Pot Cilantro Lime Rice and a delicious steak from Butcher Box to make it super delicious. But, you could definitely use Mexican rice and chicken and it would be a different kind of delicious!View Post
One of the main things that I love about Easter is the COLORS! The colors of Spring and Easter are always so bright and fun! Making dyed eggs is a fun way to celebrate Easter and make unique, colorful eggs. With this how-to, you will learn how EASY it is to make your traditional tie-dyed Easter eggs in the Instant Pot!View Post
While my kids love pizza, hamburgers, and hot dogs, the meal that they ALWAYS devour and ALWAYS eat leftover is lasagna. I always make a big pan of it because they eat it well and there are different ways to make it more healthy. When I started avoiding gluten and now that we are on a healthier eating plan, when I make lasagna for the boys, I make instant pot zucchini lasagna for us! It is SO delicious and the zucchini is a great substitute for lasagna noodles. And the Instant Pot makes it quick and easy!
