I am always struggling to add some variety in our weekly meal plan. Tacos aren’t limited to Tuesday only here, and we have Mexican food at least twice a week. I found a delicious taco seasoning that I love, and I used it with my classic Instant Pot Mexican Rice recipe to make a delicious, easy recipe called Instant Pot Ground Beef Taco Rice.
This easy dinner recipe can be eaten like a casserole or a Taco filling, or even a side dish for your main taco meal. This will quickly become one of the easy instant pot ground beef recipes that the whole family will love.
If you want to serve this as a casserole for a potluck, simply add shredded cheese on top after cooking. Add some chips and it’s like one of those traditional casseroles you find at a church potluck!
I mentioned using a taco seasoning that we love. This one tastes so much like my birria tacos because it uses ancho chiles. It seems we were tired of the same old taco seasoning, but this really adds a new flavor to boring dishes and tacos!
Easy Instant Pot recipes are my favorite, especially when you can easily cook everything in one pot and then serve a whole meal out of it! The cooking time is fairly low, just brown your ground beef in the instant pot, remove and drain, then add the ingredients and pressure cook.
This recipe is great for even picky eaters. You can customize this recipe and omit whatever they don’t like, (or simply remove it before serving!) This rice casserole can be spooned into tortillas for a taco filling. It really is a great recipe for busy weeknights.
What kind of rice can I use for Instant Pot Ground Beef Taco Rice?
I have only used basmati rice, because that and jasmine rice are my go to for every recipe, but you can use any kind of white rice, long grain rice, brown rice, or vegetables like cauliflower rice or hearts of palm rice. You definitely won’t need to cook it long if you don’t use traditional rice, maybe 1/4 of the time, but I haven’t tried. Let me know if you use another type of rice!

Do I have to use ground beef?
No, you don’t have to use ground beef (aka hamburger meat) at all! You can use ground chicken, ground turkey, ground pork, lean ground beef, or even make it vegetarian with black beans or pinto beans.

Instant Pot Ground Beef Taco Rice Recipe
This delicious Instant Pot Ground Beef Taco Rice is great as a casserole topped with cheese, as a side for Taco Tuesday, or as a taco filling!
Ingredients
- 1 lb ground beef
- 1.5 cups of rice, uncooked
- 1 package of your favorite taco seasoning
- 1 TBSP avocado oil
- 1 bell pepper, diced
- 1 tsp minced garlic
- 1/4 tsp salt
- 1/3 cup water
- 1 can of diced tomatoes and green chilies
- 1 can tomato sauce
- 1 cup of beef broth
- cheese for topping after cooked, optional
- green onions for garnish, optional
Instructions
- Set your Instant Pot to the Saute function and cook the ground beef.
- Remove from pot when cooked and drain.
- Add avocado oil to the instant pot and add in diced bell peppers and saute for abour 4-5 minutes.
- Add in minced garlic and rice, stir to combine and cook for another 1-2 minutes.
- Add in salt, ground beef, taco seasoning, and 1/3 cup of water. Stir to combine.
- Add in diced tomatoes and green chilies, tomato sauce, and beef broth.
- Stir to combine and scrape any stuck rice from the bottom.
- Make sure that the liquid is covering the rice. If not, add in more beef broth or water until rice is covered.
- Set Instant Pot to manual - 10 minutes.
- When finished, do a slow release and serve with cheddar cheese, tomatoes, chips, salsa, etc and enjoy!
