There is something about the classic Little Debbie’s Cosmic Brownies. My boys love them and we buy them on occasion, as a special treat. The rainbow colored sprinkles are fun and the fudgy brownies are a favorite treat amongst children and adults alike. I wanted to make a special treat that was different, yet fun. We love waffles, so these Dark Chocolate Brownie Waffles were a fun idea that I came up with, with cosmic brownies as my inspiration.
Now, if you have never made dessert in a waffle iron, you are missing out. My youngest loves the crispy edges of brownies, so he ate these without icing because if you leave the waffles out for a few minutes and they cool, alllll the wonderful edges of the waffle become slightly crispy, like you are getting an edge piece of brownie. If you prefer the gooey middle part of the brownie pan, you will want to eat these right off the waffle iron, slathered with delicious chocolate icing.
Can you eat chocolate waffles for breakfast?
Hmm….well, really, that’s up to you. The recipe uses brownie mix, which is a dessert, and icing, which is also a dessert, and sprinkles….so technically, yes, it is a dessert. However, waffles are a breakfast item, and if you have someone who just loves brownies, this would be a super special birthday breakfast or dessert for them! And like I have always said……who made the breakfast rules anyway? If you can eat three chocolate donuts and an iced coffee for breakfast, you can definitely have these waffles!
While brownies aren’t the traditional choice and might not offer the same nutritional start as other breakfast options, indulging in a brownie waffle for breakfast every now and then can be a delightful treat. Life’s about balance, and sometimes, a little sweetness is just what you need to start your day with a smile.
If you’re looking for a way to make it a bit more breakfast-appropriate, consider pairing your brownie with something nutritious. A glass of milk, a cup of yogurt, or some fresh fruit can complement the richness of the brownie while adding some nutritional value to your meal. Is it easy to make brownie waffles?
I love that this recipe is so easy. Is it homemade? Well, you make it at home, but as far as it being made from scratch, no. It is quick and easy because I used boxed brownie mix and canned frosting. However, you can totally use your best brownie recipe and chocolate ganache recipe and made incredibly delicious homemade cosmic brownies in your waffle iron.
To make this recipe, all you need is a large mixing bowl, a box of dark chocolate brownie mix, the ingredients to prepare said mix, which mine were 1 egg, oil, and water. Mix the brownie batter while you are heating up the waffle iron. Use spray oil or melted butter on the grates just before pouring the batter in to prevent sticking and cook just as you would cook regular waffles. You will want to monitor closely for burning, since it is hard to tell if something is burnt because of the color of the batter.
While the waffles are cooking, stir up your chocolate frosting and warm it for 10 seconds or more if necessary, to make it smooth and easy to spread. You can ice the waffles directly out of the waffle iron to let it melt more or wait until they are cool to have a thicker icing. Top with sprinkles and you’re good to go!
What sprinkles should I use?
I wanted to model these after cosmic brownies, but I used these jumbo rainbow sprinkles I found at the grocery store. If you if you want to make it like the authentic cosmic brownie recipe, you need to use these cosmic candy pieces, which are candy coated chocolate pieces. If you can’t find them, rainbow chip sprinkles or any fun rainbow sprinkles would be fun to use.

Can I add something different to these waffles?
Yes! The sky is the limit. You can substitute milk chocolate brownie mix instead of dark chocolate. You can use a homemade creamy frosting that isn’t chocolate, if you like. You can use cookie butter on top of the chocolate waffles. You could even scoop some cookie dough ice cream on top of the brownie waffle and add another on top to make a waffle ice cream sandwich! Another fun idea is adding semi-sweet chocolate chips! Place chocolate chips on the brownie batter before cooking.

Dark Chocolate Brownie Waffles with Candy Sprinkles Recipe
Brownies for breakfast? Make these delicious dark chocolate brownie waffles for breakfast or dessert! Makes a sweet treat for special days.
Ingredients
- 1 box of dark chocolate brownie mix
- oil, water, and eggs, according to package directions
- spray oil
- one can of chocolate icing
- jumbo rainbow candy sprinkles or candy coated chocolate sprinkles
Instructions
Prepare brownie mix according to package directions.
Heat waffle iron.
Spray with cooking oil spray.
Pour batter into waffle iron and cook until done.
Remove waffles with care and let cool on a plate.
Finish making brownie waffles in waffle iron.
Stir icing in a small bowl, microwave for 10-20 seconds if needed.
When brownie waffles are mostly cool, spread icing on top.
Top with jumbo rainbow sprinkles or candy coated chocolate sprinkles serve and enjoy!

Store in an airtight container in the fridge for up to 5 days.
Use any leftover batter to make traditional brownies or brownie cookies!
