Juicy chicken breasts are seasoned with Italian seasoning, salt, and pepper, then seared to golden brown perfection in a large skillet with a touch of oil. Once the chicken is browned, it’s transferred to the crockpot to slow cook in a creamy sauce made from a combination of sun-dried tomatoes, chicken stock, heavy cream, garlic, and basil.

The beauty of this recipe lies in its creamy sauce, which is rich and flavorful, thanks to ingredients like Parmesan cheese and heavy cream.

While the chicken slow cooks, you can go about your day knowing that a delicious dinner awaits you. After 3-4 hours on high or 6-8 hours on low heat, the chicken will be perfectly cooked and ready to serve. Pair it with your favorite side dish, such as garlic knots or green beans. Spoon the chicken and cream sauce over your favorite pasta or rice, such as angel hair pasta or cauliflower rice, for a complete meal that’s sure to satisfy.

If you have leftovers, store them in an airtight container in the refrigerator for up to a few days. Leftover chicken can be reheated and served alongside garlic bread or used to make sandwiches for a quick and tasty lunch. For more delicious foods, check out these Canadian recipes.

Ingredients

  • 3 chicken breasts (large, boneless, skinless)
  • 2 tablespoons oil from jarred tomatoes
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1/3 cup sun dried tomatoes, drained
  • 2 tablespoons salted butter
  • fresh basil for garnish
  • grated parmesan cheese for garnish

Instructions

    1. Cut the chicken breast in half to make thinner fillets.
    2. Pan sear the chicken in a skillet on medium-high heat for 2-3 minutes on each side, with the herb oil drained from the sun-dried tomatoes.
    3. Add the chicken broth and heavy cream, then mix in the spices. Make sure there are no clumps.
    4. Pour the mixture into the slow cooker, add the chicken, butter, and sun-dried tomatoes.
    5. Cook on high for 4 hours. At the 3-hour mark, remove the chicken and whisk the sauce, adding a teaspoon of flour at a time to thicken it if desired.
    6. Return the chicken to continue cooking for the last hour.
    7. Serve over desired pasta or white rice and garnish with fresh chopped basil and parmesan.

Notes

If you prefer a thicker sauce, you can mix cornstarch with a tablespoon of cold water and stir it into the slow cooker during the last 30 minutes of cooking

If you prefer a lighter dish, omit the heavy cream.

Sub coconut cream for heavy cream and use dairy free butter for a dairy free option.

Can you substitute something for the sun dried tomatoes? We don't like them.

I haven't tried, but I'm sure you could substitute with something similar or leave them out.

I tried this recipe with coconut cream instead of heavy cream to make it dairy-free, and it turned out great. The flavor was still rich and creamy. It's so quick and easy to make!

This was delicious! I did add the cornstarch to thicken the sauce and served it over rice and my family loved it! Hubby took leftovers for lunch the next day.
