Ingredients

  • 4 cups fresh or frozen corn kernels
  • 4 cups chicken or vegetable broth
  • 1 cup diced potatoes
  • ½ cup diced onions
  • 1 cup diced celery
  • 1 cup diced carrots
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons butter
  • Chopped fresh chives, bacon, and shredded cheddar cheese for garnish (optional)

Instructions

    1. Set your Instant Pot to the sauté function and melt the butter.
