Honey Butter Chicken Bacon Biscuits – Breakfast for Dinner is a Win on School Nights!

My family loves the honey butter chicken biscuit from Whataburger, and other chicken biscuits from the local fast food joint. Since we like breakfast for dinner, I decided to easily recreate this recipe at home, and add bacon, because of course I am going to add bacon. This is the ultimate comfort food! 

This recipe is a winner for game days or busy school nights. It all comes together quickly and easily and you can make it all in your oven or air fryer.

I picked up lightly breaded chicken strips because I find that the breading on frozen chicken strips can tend to be a little overwhelming and especially with the biscuits, you just don’t want too much breading. But, whatever you have on hand will do. You can also choose to make your own chicken strips and that will definitely taste better but you will spend a lot longer in the kitchen, too.

I also used thick bacon, but you could use thin. Again, you want something that will stand up to the thickness of the biscuit. I used frozen Pillsbury biscuits, but you can use a homemade buttermilk biscuit recipe or canned, even. These are just most like the fast food biscuits. We really like a good flaky buttermilk biscuit.

If you truly want to recreate the Whataburger honey butter chicken biscuit, you will need to soak the biscuit in the honey butter sauce.  Ok not really, but a light brush on top is likely what they do. If you like buttery biscuits, for sure drizzle some extra honey butter on top of the biscuits or at the very least, brush the tops with a stick of butter.

If you are making a large batch of this honey butter chicken biscuit recipe, make sure you have enough chicken tenders and store-bought biscuits.

Create an assembly area for your chicken sandwiches on a work surface covered with a wire rack or parchment paper. You want to assemble right away and quickly so they will still be warm when serving.

Feel free to play around with flavors and customize your biscuit to your liking by adding hot sauce, cayenne pepper, hot honey, maple syrup instead of honey, or garlic powder.

Honey Butter Chicken Bacon Biscuits

Honey Butter Chicken Bacon Biscuits

Yield: serves 4-6
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Honey butter chicken bacon biscuits are quick and easy, perfect for breakfast or breakfast for dinner on a busy school night!

Ingredients

  • 6 frozen lightly breaded chicken strips
  • 5-6 pieces of bacon
  • 6 frozen buttermilk biscuits
  • 2 TBSP honey
  • 1/2 cup of butter

Instructions

    1. Cook biscuits and chicken strips according to package directions, adjusting temperature so you can cook them simultaneously.  (Chicken strips need about 20 minutes at 400 degrees, but can alternately be microwaved.)
    2. While biscuits and chicken are cooking, place 5-6 of bacon on a large, microwave safe glass plate.
    3. Cover with two paper towels.
    4. Microwave bacon on high for five minutes or cook on the stove or air fryer.
    5. Check the bacon and cook another 3-5 minutes, depending on how crispy you like it.
    6. Drain off bacon fat and blot with paper towels, set aside.
    7. Soften 1/2 cup of butter in microwave.
    8. Add in 2 TBSP honey and mix well with a whisk, set aside.
    9. When biscuits and chicken are fully cooked, carefully cut chicken strips to fit the biscuits.
    10. Open the biscuits and place as much chicken and bacon on it as you like.
    11. Top the chicken and bacon with honey butter and place the top of the biscuit on top.
    12. Drizzle biscuit with more honey butter, if desired.
    13. Serve and enjoy!
